Poached Pear in Maple & Spice Syrup
Elegant, Festive, and Healthy Holiday Dessert
In search of a healthy, light, and easy dessert for the holidays? I have just the perfect one for you. This poached pear in maple & spice syrup checks all the boxes. Just sweet enough, easy to prepare, delightful, healthy (no refined sugars), vegan (if you are so inclined), individual small portions, and a presentation with some wow factor, it will soon become your new favorite dessert.

In my cooking classes, we used to poach them in some fruit juice or sweet wine. I didn’t have either on hand this time and decided to try it with some plain old water, and it turned out delicious and perfect. The secret: Infusing the water before poaching the pears allowed the spices to release as much fragrance as possible for a more aromatic syrup and perfumed fruits. As for the finishing touch, I sprayed the pears with some edible gold stardust for a little Holiday Season magic. If you can’t find any, no worries, you can sprinkle the fruits with toasted chopped nuts, which will be great too. For a simple, easy, and less sweet variation, you can follow all the steps until the pears are poached. Instead of reducing the water, you can discard it (or finish the syrup and use it for something else) and melt some dark chocolate (100% if you like it), drizzle it on the fruits and sprinkle them with toasted nuts like almonds or hazelnuts for some added texture.

Poached Pear in Maple & Spice Syrup
Ingredients
- 6 Cup / 1.5 liter Filtered Water
- ½ Cup Maple Syrup, divided in 2
- 12 Cardamom Pods, lightly crushed
- 2 Cinnamon Sticks
- 1 Star Anis
- ¼ tsp Vanilla Powder or fresh seeds from a bean
- 6 -9 Mini Pears, peeled with the stem still attached. Use a little bit of lemon juice to prevent them from turning brown.
Preparation
- In a medium saucepan, or big enough to hold all the pears, combine the water and all the spices. Bring the mixture to a boil, cover with a lid, and reduce the heat to medium. Simmer for 1 hour to infuse the water with the spices.
- Add ¼ cup of maple syrup and the pears to the liquid. Simmer, with the lid slightly open, for about 20 minutes or until the pears are tender. Remove the pears from the liquid, set aside and allow to cool.
- Bring the liquid back to a boil, reduce the heat and simmer uncovered for another 30-40 minutes or until you have about ½ cup of liquid left.
- Remove all the spices and discard. You can strain the liquid, collect it in a bowl, and pour it back in the saucepan if easier to catch all the little pieces.
- Add the other ¼ cup of maple syrup, bring the heat to medium high and gently boil the liquid for 5 more minutes to thicken the syrup. Remove from the heat and cool to room temperature.
- Place each pear on a small plate, drizzle with the spice syrup, and add a few sprays of edible gold stardust. Serve immediately.
Notes & Tips
- You can wait to spray the pears once served at the table for a little extra wow factor!!
- I chose 6 mini pears but if you need just 4 it is fine to poach them in the same amount of liquid. You will have extra syrup to drizzle on some ice cream or to add to a cup of tea. Delicious.
- The extra syrup will keep for weeks in the fridge. Place it in a glass container with a lid.
- I poached the pear in water on purpose to keep the recipe simple and healthy, but you could replace it with white grape juice or a sweet dessert wine.
